In Japan, Toshikoshi(literally meaning "passing year") Soba is eaten on New Year's Eve.

SPECIAL RECIPE #2 Garlic Beef, Hasaki's signature dish



In this post, Mr. Nobuhiro Mori, executive chef of Hasaki, shares his recipe for Garlic Beef, an original East-meets-West dish that maximizes the essence of garlic. He uses garlic in two different ways to add depth of flavor to the dish. Chef Mori’s Garlic Beef recipe reflects his philosophy of taking time to prepare and finishing quickly and simply. “You can finish this dish in two minutes if you cook the garlic oil and garlic soy sauce in advance,” says Chef Mori. The garlic oil and soy sauce can both be preserved for a while, so you can make a large amount and use them to sauté fish, chicken, and vegetables. The nutty, full-bodied flavor of these garlic-sautéed dishes makes them the perfect toppings for donburi (rice bowls).
Ingredients (serves one or two)
5 oz. thinly sliced beef
[Garlic oil]
3 oz. olive oil
1 clove garlic
[Garlic soy sauce]
3 oz. mirin
3 oz. sake
3 oz. soy sauce
1 clove garlic
Steps
1. Heat olive oil and thinly sliced garlic in pan at low heat until garlic slices brown.
2. Strain garlic oil to remove garlic slices. Keep garlic slices on side.
3. Put mirin and sake into saucepan and bring to boil. Flamble to burn off alcohol.
4. Add soy sauce and mashed garlic into mirin and sake mixture to make garlic soy sauce.
5. Heat garlic oil in pan until it smokes. Sauté beef.
6. Once beef is cooked, add garlic soy sauce and bring to boil. Once boiling, remove from heat.
7. Place beef and sauce on plate and arrange garlic slices on top.
*You can also enjoy Garlic Beef Bowl by laying these beef slices over steamed rice! It's SO good.

We will welcome Mr. Yoshitaka Murai, President and Mr. Hirohisa Kikuchi Executive Sales Manager of Asabiraki Brewery from Iwate, Japan.
Iwate prefecture is well known for the place of birth of original Nanbu Toji. Since mid 1800, they have strained on brewing sake at the town of blessing of pure water, rice, and technique of brewing sake of Iwate prefecture.  Their sake Asabiraki has always been highly valuation at local area and all over the countries even in over-seas.


Many breweries were damaged by the recent Earthquake in the Tohoku region and Asabiraki brewery was one of them. Please support breweries and Japan to drink Nihon-shu together!

Summer Pick #3: Japanese Classic Soda, Ramune!

Before the summer is gone, please stop by Otafuku and try Ramune, Japanese Classic soda! Ramune is a carbonated soft drink originally sold in Japan Ramune is widely known for the distinctive design of its bottle, often called Codd-neck bottles after the inventor, Hiram Codd. They are made of glass and sealed with a marble; the codd head is held in place by the pressure of the carbonation in the drink. 


To open the bottle, a device to push the marble inward is provided with the bottle. The marble is pushed inside the neck of the bottle where it rattles around while drinking.


This drink always reminds me of summer when I was a little boy..
