Had a superlatively amazing dinner last night with one false note: the seabass in robatayaki style which should have been the highlight of the grilling technique was a HUGE disapointment. Waiter explained i usually fish comes from Tsukiji fish market and because of current crisis in Japan they have to provide locally. That may be, but I wish management addressed this issue as this seriously affects the reputation of such an outstanding establishment and grilled fish shd be a signature feature in their menu. I'm sure it would be possible to source much better fish than what we were served.
ReplyDeleteOther than that, all other dishes were stellar: even simple shiitake was to die-for; and must-order grilled uni with julienned kombu is an instant classic and an education in umami.
Bravo again, Mr. Yagi, but please correct crucial fish issue.
